Sous Chef - The Greenway Hotel & Spa

Located on the outskirts of the Regency town of Cheltenham, The Greenway Hotel & Spa is a 16th Century luxury Elizabethan Manor House Hotel and Spa. The hotel, with its warm Cotswold stone exterior draped in ivy, is the picture of English country charm and lies in eight acres of stunning grounds with views over the rolling Cotswold Hills.

The hotel forms part of the Eden Hotel Collection, which is a small group of privately owned unique places to stay offering the finest cuisine and extraordinary hospitality and combines traditional character with contemporary style to create a relaxed and welcoming home away from home for every guest, whether for business or pleasure. The dedicated team draw on a wealth of experience to ensure a memorable and comfortable stay for our guests.

We are now seeking a Sous Chef to join our Kitchen team who will assist the Head Chef in the day to day management and running of the Kitchen. We are looking for an inspired and committed individual, with a passion for high quality food and standards.

Main duties will include:

To lead by example and implement all procedures (HACCP, Health and Safety, COSHH and Food Safety Management) to the required standards to which training has been received.
To manage all team members to ensure productivity and complete organisation within the kitchen.
To motivate and promote positive behavior within the team.
To communicate effectively within the kitchen and other departments.
To create new dishes and evolve the menu development.
To assist the Head Chef in controlling all kitchen costs and achieveing the set budgets.
To work calm under pressure showing alertness, vigilance whilst taking the initiative.
To work towards the kitchen and business objectives.
To encourage and develop individual skills whilst contributing to any training needs in the kitchen.
To assist the Head Chef in creating and implementing new systems within the kitchen to increase efficiency and productivity.
To be proactive in self-development and development of all members of the kitchen brigade.
To promote the image of Eden Hotel Collection as a professional organisation.
Comply with all Company Policies and legal requirements with special reference to Health and Safety.
