We are currently recruiting for an experienced and passionate Sous Chef for our client business which is a high profile insurance company based in Central London.

This site consists of café style staff dining which caterers for 250 employees on site. You will be working as a part of a small team, reporting to Chef Manager. This position is full-time, Monday to Friday, 40 hours per week. Some overtime and evening work might be required, depending on business needs.

Your main duties and responsibilities will include:

  • To fully understand the H&J brand in terms of food and food service
  • To produce food which is seasonal, of known provenance, locally sourced in a timely fashion to ensure smooth service to the customer
  • To assist the Chef Manager in developing and planning menus that are in line with client and customer expectations
  • To prepare and oversee all preparation of food to the highest standard and in line with the H&J styl
  • To ensure that all appropriate ingredients are available for the menus being prepared and where necessary identify shortages and instigate action to source ingredients
  • To control costs through efficient purchasing and use of existing stock whilst ensuring that H&J standards and style is maintained
  • To work with the Chef Manager to deliver all budgetary targets on site through a thorough understanding of GP, GP%, selling price, cost price, margin, mark up and calculation of menu costs through recipes
  • To provide any necessary on-job training whereby increasing the team's understanding and knowledge of produce
  • To understand and comply with H&J and statutory health, hygiene and safety, quality standards including COSHH and HACCP and to ensure that all tasks are carried out in accordance these standards by all members of the kitchen team

The ideal candidate has:

  • Has NVQ level 1 and 2 qualifications or similar City and Guild examinations
  • Has a broad knowledge of H&S and Food Hygiene
  • Has previous experience in a similar role
  • Is enthusiastic and passionate about food
  • Has great oral and written communication skills
  • Has financial awareness
  • Is a team player
  • Is a capable instructor
  • Is committed and enthusiastic to the job
  • Has organisation and planning skills
  • Is customer focused
  • Is able to work well under the pressure
  • Has excellent product knowledge, including an understanding of seasonality, quality and cost
  • Has numeracy skills
  • Is computer literate
