Section Chef

Reports to: Kitchen Manager
Responsible for: All aspects of La Tasca Standards i.e. Food/People/Top line/Safety
Qualifications/ Experience: Experience preferred in a similar branded operation/high volume business.

Purpose of Role:

- To assist the Kitchen Manager in driving food sales, quality and profit within the branded framework
- To assist the Kitchen Manager in following the core/new La Tasca framework
- To assist the Kitchen Manager in holding responsible for the food management processes and controls required to run an effective kitchen/team (which includes recipe process, service, staff rotas, team training, due diligence, stock control/profitability, food safety, HACCP, COSHH and legal compliance)
Principle Duties/ Responsibilities: To assist the Kitchen Manager in all the below aspects:


- Participate in kitchen pre-session/de-briefs as appropriate
- Maintain standards to ensure delivery is professional and effective
- Attend and participate in management meetings
- Attend cook-offs and menu change meetings
- Assist in maintaining high personal standards of cleanliness and correct uniform worn at all times in line with company policies

Sales & Marketing:

- Ensure preparation and stock levels are maintained in line with the needs of the business
- Liaise regularly with Kitchen team for La Tasca promotions
- Ensure that the Cookbook specifications are followed at all times


- Portion control
- Update & review par levels with Kitchen Management
- Assist and control all kitchen costs
Service Quality:

- Assist with the day to day running of the kitchen, maintaining the high standards of the La Tasca brand
- Assist all team members adhere to Company standards of service delivery
- Report any maintenance issues immediately to the Kitchen Manager for Pronett actioning
- Assisting & input to pre-brief/de-briefs with the team members & FOH service teams
- 'Service style' standards criteria achieved every shift
- Assist in reviewing food quality via de-brief


- Assist in ensuring all team members adhere to Health & Safety and Food Hygiene policies and update when and where required
- Liaise professionally with EHO, PSN and other agencies, reporting back to the Kitchen Manager all communications
- Comply with all Company policies and procedures
- Comply with all sections of due-diligence

La Tasca Standards:

- Conforming to the Expedite Policy (full training to be provided)
- Ensuring all menu dishes meet the presentation and specification requirements to La Tasca
- Effective communication with the rest of the team
- Clean and well maintained kitchen uniform
- Loves working as a vital member of the La Tasca Family
