Concessions Manager, Wembley Stadium

THE POSITION

We currently have two exciting but challenging opportunities for Concessions Managers based at Wembley Stadium. One will be responsible for the Level 1 General Admission concessions account. This area welcomes up to 34,000 guests through its turnstiles for every bowl event and the clientele is forever changing from football fans to rugby fans to NFL fans to screaming teenage girls wanting to see the latest boy band under the bright lights of the National Stadium. The Level 1 area has 34 static kiosks ranging from full cooks to bars to grab and go's and heat and serves all having different offers to meet the audiences palate. As well as 34 static kiosks there is a range of mobile carts located around the bustling concourse and on concerts and NFL there is opportunity of having hawkers mingling with the grounds with further food and beverage offers tailored for the event.

The other Concessions Manager will be responsible for the Level 5 General Admission concessions account. This area sees 39,000 fans on bowl events with 26 kiosks.

BRIEF OVERVIEW OF RESPONSIBILITIES

1. Work collaboratively with the Head of Concessions, the Concessions management team and Concessions Head Chef to implement effective operational delivery and financial planning to achieve departmental budget.

2. Achieve agreed budgeted targets and maintain commercial focus on all aspects of the Concessions operation. Where necessary take corrective actions. Areas of focus include Event Day labour planning, Event day stock to cash analysis.

3. Effectively manage cost lines so as to adhere to agreed financial planning parameters (summary areas to include labour planning, stock to cash analysis, food and beverage cost lines and any other associated cost)

4. Improve the customer experience by using the business measures and tools to create and implement action plans to improve performance.

5. Maintaining an awareness of the local marketplace and competitors and ensuring a proactive and modern approach to customer experience

6. Responsible for delivery of operations in a volume driven environment, strong sales history with unique trading patterns.

THE PERSON

Essential

Previous experience in a similar scale role (£3.5- £5 million revenue)

Proven record of multitasking, planning and operating within a large venue

Interpersonal skills and collaborative management style

Excellent communication skills both verbal and written

Competent computer skills and proficient in al Microsoft packages

Passion for food and food quality

Desirable

Public Licence Holder

Experience in managing and costing of payroll

Experience of use of commercial business tools forecasting, P&L management, reporting

Knowledge of local trends within the industry
